Peachy!

Another attempt at pie… another mess of gooey goodness!  This time I tried a peach pie because I had some frozen peaches that I needed to use.  Plus I still had one of those deep dish pie crusts on hand.

I checked out All Recipes to see what they had to offer.  If you haven’t been there, do go.  It is full of recipes for every taste and every occasion.  But speaking of recipes, do any of you know a site where I can plug in ingredients I already have and get a recipe that uses them?  Anyway, back to pie…

I ended up combining two different recipes.  I didn’t have a top crust, so I found a recipe that uses a cream cheese layer on top.  I wasn’t too keen on the filling part of that pie, so I used a more traditional approach that added sugar (Splenda!) and cinnamon to the mix.

You have to drain the peaches (frozen or canned) and reserve the juice.  That gets blended with the cream cheese and more Splenda.  Here’s how it looked before baking:

Actually, that’s just the filling part.  I forgot to take pictures of it with the cream cheese topping, and completely baked.  It looked delicious, but fell apart completely when I tried to serve it.  Considering that I don’t like peaches that much (at least compared to other fruit), I thought it was pretty good.
